It is Sunday morning,and once again i am searching for a perfect recipe to threat my family and to company my coffee since i am excessive coffee lover!  

Ofcourse i am looking for healthier versions of the sweets we all adore.Carrot cake is one of my favourite sweets all times!Either you adore carrot cake-either not at all.I am one of those fanatic ones!Flavory,fluffy taste mixed with creme cheese is divine-but since the summer is just around the corner-we have to improvise a bit and create “healthier-less guilt “sweets.


Let’s get something straight-I am not a pro! If sometimes pictures of the stuff i make don’t look perfect-i don’t care- really-’cause i know the majority of moms are exactly the same like me-not “picture perfect”-but perfectly delicious!

 

 

Let’s start for todays FUN recipe! Carrot Muffins with apricot marmalade is entirely my improvisation!It turned out pretty amazing.I used gluten free flower adn for diary free version-you can use greek yogurt instead f creme cheese!I wouldn’t skip creme cheese tho-cause it gives all the beauty to this muffin recipe.It has so much flavours,yum.

ingredients:

  • 2 cups of smashed fresh carrot
  • 1 cup of gluten free flower
  • 1 spoon of baking powder
  • 2 spoons of cinnamon
  • 2 spoons of nutmeg
  • a bit of orange juice
  • orange zest
  • half of cup of soya vanilla milk,Alpro
  • 2 spoons of coconut oil
  • 2 eggs
  • 1 cup od brown sugar
  • apricot marmalade
  • half of cup of powdered sugar (for the frosting)
  • creme cheese 150 gm
  • or 1 non fat greek yogurt (for diary free version )
  • vanilla extract
  • butter 100 gm(room temperature)

How to?

Preheat the oven at 180 C.Mix flower,baking powder,cinnamon,nutmeg at one large bowl.In another bowl beat eggs and sugar with the mixer until fluffy.Add vanilla,soya milk,coconut oil and continue mixing.Add carrots and softly mix well.Slowly start adding flower mixture and be careful the bat bot to be stiff.We need it to be like on the picture.

Fill your cupcake module with the carrot muffin bat.At each one-add your delicious apricot marmalade in every filled cupcake module.Place it it in the oven for 30-40 minutes.You will have to check with the toothpick method to know when your muffin is ready.

The frosting

Mix butter,powdered sugar,vanilla extract and the creme cheese with the mixer.Leave it in the fringe to cool.

For diary free version-you can mix yogurt with the vegetable butter,vanila and powdered sugar.I haven’t tried this since i am dying for creme cheese frosting.

 


It is divine.Trust me,if you are a carrot cake lover-this version will suit you!You can treat your kids with this fluffy,flavory muffin and they will loooove it!Not exactly nutela pancakes but try it.
